
Pancakes with spinach and avocado

Ingredients for making the dough:
2 eggs (separate into whites and yolks)
60 g plant-based milk
1 tbsp Greek yogurt
a pinch of salt
dried garlic to taste
70 g fresh spinach
3 tablespoons oat flour
½ tsp baking powder
Ingredients for making avocado sauce:
1 ripe Avoxy avocado
lemon juice
a little honey
spoon of yogurt
a little water — for desired consistency
How to prepare:
Separate the whites from the yolks.
Add milk, yogurt, salt, garlic, and spinach to the yolks and blend in a blender until smooth.
Add oat flour and baking powder, mix.
Beat the egg whites until stiff peaks form and carefully fold into the batter.
Fry the pancakes in a dry frying pan or with a drop of oil until golden brown.
For the sauce, mix all the ingredients until creamy.
Serve warm pancakes with Avoxy avocado sauce.
